Couscous is a staple in north African cuisine and is made of semolina and steamed wheat flour. It is actually a pasta, not a grain.
Cooking with Couscous
Just pour over some boiling water, wait a few minutes for it to hydrate and then fluff with a fork. You can add fruit and vegetables to it or add to a salad or soup.
For a scrumptious side dish of coconut couscous, bring 1 cup of coconut milk and 1/2 cup of water to the boil, then remove from the heat and add the raw, unprepared couscous. Cover and let it sit for 5 minutes, then add some spring onions.
