The coffee beans you brew are actually the processed and roasted seeds from a fruit, which is called a coffee cherry. Even though the coffee beans are seeds, they are referred to as "beans" because of their resemblance to true beans. Coffee trees can grow to more than 9 meters and live up to 100 years!!
The harvest period for these coffee beans is from February - June, and coffee is delievred daily in this period by the local farmers. The coffee is placed in water to sort the good quality from the bad quality - good quality cherry sinks. It is then collected, pulped and fermented for about 12 hrs, before being washed and dried.
This particular coffee is a relationship coffee, which means that the roasters and farmers work together to establish a long-term trading partnership, where the farmers receive a fair price that is not vulnerable to commodity market fluctuations.
By buying this coffee you are also supporting the One Tree Planted Project - for every kilo sold of these coffee beans, one tree will be planted in the Rwandan forest.

Using these Coffee Beans
The roasters recommend a brew ration of 1:2.2 for an espresso, so grind 18g of these beans, and let it run through the espresso machine until you have 40g / 40ml coffee. This should take approx. 30 seconds. Adjust the grind if it is taking more or less time.

Store in an air tight container in a dark, cool, dry place. A cabinet near the oven is often too warm, and so is a spot on the kitchen counter that gets strong afternoon sun.
To keep the great flavour, use within 1 month. The coffee will keep for up to 6 months but the flavour won't be as good. See best before date.
