Coconut products make a great alternative to dairy creams and butters. The milk is an excellent base for smoothies, soups, and curries; the oil is a great source of saturated fat - just use this in place of a cooking oil - I roast my veggies in coconut oil and fry veggies / meat in it; the water is superior to commercial sports drinks with its impressive electrolyte content.
Desiccated coconut is unsweetened, very finely ground coconut flesh with a subtle sweetness and most of the moisture removed. It is different to coconut flour, which has the fat removed.
Cooking with Dessicated Coconut
It is ideal for use as a topping for curries or other asian dishes, as an ingredient in baked goods and granola.
The taste of desiccated coconut takes another level when you toast it - spread it out on a tray and bake in the oven at about 160 degrees for 10 minutes until it just starts to brown. Now sprinkle this over a bowl of berries, yogurt or porridge.. delicious! You can also try toasted coconut as an alternative to breadcrumbs when breading chicken or fish or add it to frozen bananas and blend until smooth for coconut soft serve.
