Get ready for pancake day, or a weekend treat and try these brown rice flour pancakes! Mix 1 cup of brown rice flour, 1 tbsp sugar, 2 tsp baking powder, 1/4 tsp cinnamon and a pinch of salt. Add 1 beaten egg, 1/2 tsp vanilla and 1/4 cup of milk of your choice and whisk well. Then heat some coconut oil in a pan - wait until lit is hot before adding some batter. Cook on one side until the bubbles start to form and then flip over. Sprinkle with berries and a drizzle of maple syrup or have a savoury dish and top with bacon and avocado..
