Red fox peas are a red-brown variety of the carlin pea and have a delicious nutty flavour. They make an excellent British substitute for chickpeas or puy lentils. They' work well in soups, stews, curries and salads, and are a great accompaniment to roast vegetables.
By buying and cooking with dried peas rather than canned/precooked peas, you will not only enjoy a much nicer taste after they have been cooked, but you'll also save money!
Cooking with Red Fox Carlin Peas
Soak overnight, or quick-soak by placing in boiling water, taking it off the heat and leaving for one hour. Then rinse, cover with water and bring to the boil. Simmer (covered) for 40 to 45 minutes until tender.
